The results indicated that the mortadella made from fresh meat was the best in terms of chemical and physical properties, so it gave a yield of 136, while the mortadella made from salted minced meat and then frozen. The results of the chemical and physical analysis were close to the mortadella made from fresh meat. The obtained results showed that the use of unsalted frozen minced meat negatively affected the chemical and physical composition and led to a decrease in the percentage of fat, ash and NPN, and it also negatively affected the texture of the mortadella made from it.
